Fabulous benefits of Fermented Foods.


It is not widely known how to make it, here is a method which ensures there is always a helping to go as a side dish with any meal..

Firstly, Sauerkraut is a 

  •  a fermented food - salt is sprinkled over raw cabbage, and the left to stand for 10 minutes until the salt begins the osmosis process which draws moisture out of the cabbage. Kneading, crushing or mixing with a wooden spoon will also be necessary.  There is a variety of micro organisms in this moisture as well as on the leaves of the cabbage which begin to react together and over time will ferment.
  • The ratio of salt to cabbage should be around a 2 percent salt solution which works out to one  table spoon of salt to one kilo of cabbage. It is not necessary to use any more salt than which is required  as long as you keep to 2% ratio is a surprisingly little amount of salt, So this is not a high sodium content food source... the fresher the cabbage the quicker the process of osmosis.
  • Takes anything from 2 to 6 weeks to ferment depending on the size of the container and amount of cabbage used.
  • Sauerkraut Aids digestion by assisting with the balancing of gut flora by providing a variety of pro-biotic's. That is the healthy pro life bacteria that are a component of digestive juices.
  • Consuming it means that the body can more easily digest food.
  • The fermentation process takes place when salt causes the water in the cabbage to leak out due to osmosis. This water is filled with fermentable sugars  / carbohydrates which forms nourishment to the micro organisms (bacteria) present on the cabbage leaves. The bacteria's life function generates or creates lactic acid which ultimately pickles the cabbage.

    A surprisingly little amount of salt is needed, but it is important to have the correct ratio of salt to cabbage (1 tb spoon salt to 1kg cabbage) in order to get the process going yet not overdoing it to make it a high sodium meal! For 1 medium cabbage that filled 3 jars, I used only a little over two table spoons of pink Himalayan salt. The salt used should be un-iodated or canning or pickling salt. The bit I used  amounted to less than 1/4 of the packet which is visible in the pictures below.

Shred the cabbage finely and then start incorporating the pre measured salt, constantly mixing up the cabbage and salt with a wooden spoon or washed bare hands. The bruising of the cabbage leaf releases water from it. When the consistency of the cabbage has changed to wilted and watery it is time to be be packed tightly into clean and dry  jars with just enough juice covering it so that all oxygen is removed.  A shot glass or ramekin can be used as a weight. An an-aerobic or oxygen free environment is required for the fermentation process to take place and this is ensured by the water covering to packed cabbage.

This will give the Probiotic's a chance to grow.... 

After a few weeks a deliciously, fermented sauerkraut will emerges ready to be enjoyed as a side dish with almost anything... 

 Kefir - Another product of the fermenting family.

Kefir is an Arabic word and loosely translated it means "good feeling" - this is because ones body is rewarded with a feeling of well being if this fermented drinks is consumed regularly. The grains are the result of a symbiotic relationship between bacteria and yeast.. Fermentation takes place as the grains live and feed off the carbohydrates (sugars) and proteins in the water or milk. 

In a house hold with thirsty children and adults alike can refresh themselves as well as benefit from an array of pro biotic's, (good stomach flora) vitamins, minerals, & enzymes. The exact content of these life supporting food sources varies from batch to batch depending on the raw ingredients used. The Kefir Grains can either be used to ferment milk or water.   

Water Kefir - Easy Recipe for 1 litre 

  1. 50 grams Kefir grains (just less than 1/4 cup)
  2. Sugar (equal amounts of sugar and Kefir grains)
  3. A pinch of the pink Himalayan salt 
  4. 1/4 teaspoon of Molasses
  5. 1 litre of water

Instructions: Place all ingredients  in a jar with a glass or plastic lid and leave to ferment for 48 hours.

Water Kefir - Coconut and Cinnamon Recipe

  1. 50 grams Kefir grains (just less than 1/4 cup)
  2. 1 Litre of Organic Coconut water
  3. Cinnamon Sticks

Instructions :  Place all ingredients  in a jar with a glass or plastic lid and leave to ferment for 48 hours.

Larger quantities can be left to ferment for longer but its always a good idea to keep an eye on the pressure inside the container as the gas build up does occur

Milk Kefir - Easy instructions for cultivating fermented Kefir milk in the kitchen

Always use glass, plastic or wooden utensils when handling Kefir grains - no stainless steel or any metal objects as these react with the bacteria and yeast grains and kill it..

Mix about a 1/4 cup of milk Kefir grains with organic fresh full cream milk, keep airtight for at least 48 hours, When the fermentation process is well underway it is time to enjoy a slightly fizzy, deliciously fermented milk which contains high levels of vitamin B12, magnesium, vitamin K2, biotin, folate, enzymes and pro biotics, which when consumed regularly, perhaps in the morning as part of breakfast is an immune booster, settles IBS, builds bone density, fights allergies and even kills candida overgrowth, a sign of overuse of antibiotics. The actual grains are never consumed and it is important to always use a sieve to keep the grains safe to grow and multiply. 


Juicing for Joy. 

When we juice fresh, organic preferably home grown seasonal fruit and vegetables we concentrate the enzymes in the plant juices that enhance gut health. A cascade of health benefits occur which begins with the intake of more vitamins, minerals, enzymes and amino acids..  These are some of the very building blocks that make up the body. 

The term juicing for joy comes from the fact that once you give your body what it needs, it will reward you with joyful, happy feelings and emotions, you will feel lighter, less blocked some folk report brain fog lifting and other benefits like reduction of cravings and stabilising of mood swings. 

Juicing is best when not over done, adding perhaps 3 juiced smoothies to a balanced diet a week is more than enough to start "feeling the benefits" over the long run.

What you are adding to your body are the building blocks found in almost every cell: DNA, each spiral helix is made up of amino acids (proteins) they also consist of minerals which act as the smart glue which binds it to other amino acids and vitamins eventually forming cells... Enzymes are needed to act as catalysts during the digestive process. When cells replicate, if any of the required building blocks such as minerals are missing i.e. lacking from the diet, the cells reproduce with a "gap in their programs" so to speak and weaknesses begin to occur over generations, this is why science shows that some poor health is hereditary, however the good news is that we can intentionally begin to reprogram our very own DNA by adding a variety building blocks found in the abundance of fruit and vegetables from home grown gardens. The reason home grown works better than a weekly shop is freshness.. Organic Vegetables have an unearned reputation of being more expensive which isn't always necessarily so, especially if home grown. Organic markets are becoming more and more popular as folk begin to see the effects of environmental toxins and pollutants such as insecticides and other chemicals on their health. It is worth it to go the extra mile and seek out organic, the more people that do,  the more incentive there would be to supply organic.. Barley green or wheat grass, spirulina, moringa, mint, spinach, lime ...  superfoods!

Colloidal Silver 

Colloidal silver is a fantastic anti fungal, anti viral and anti bacterial, it prevents the spread of a variety of single cellular pathogens by having a magnetic effect on the DNA of the destructive cell, thus preventing it from taking over healthy cells. Minute silver particles called ions are released via electrification of the 99.9999 silver wire (not sterling silver!) into distilled water and a pinch of salt ensures a multipurpose antiseptic that can be used to treat many types of infection. Always good to replenish the good bacteria by adding pro-biotics to the diet.

What follows is a brief description of liver flushing which I have found quite helpful, bear in mind this is Hulda Clarks recipe, although you may find it in many places including the wonderful books of: 

Liver Cleanse

This is a natural way to effectively and painlessly remove from the gallbladder and liver, most stones, gravel, crystals, debris and residues that hinder your body's detoxification and healing. It cleanses the liver bile ducts and eventually purifies the blood stream by making the liver cleaner and more efficient.

This is a procedure you can do at home, over one weekend, using ingredients from a local food store - for a little more than R30.00. In addition, it is non-toxic, fast acting, has NO side-effects, promotes increased well-being, raises the level of available energy, provides freedom from most allergies, and it helps cope with addictions.

Although this procedure has been practiced with great success for untold generations, its common use has largely been forgotten, and in this day and age its propagation is not only unknown but even suppressed by the traditional medical system.

Purpose of the cleanse:
This cleanse is used to clean the liver and gall bladder of gall stones, gravel and sand to dramatically improve your body's health. The liver cleanse also has the ability to expel pollutants and toxins from the gallbladder and liver. You can expect your allergies to disappear more and more with each subsequent cleanse. Each liver cleanse "cures" a different set of allergies, suggesting that the liver is compartmentalized - different parts having different duties. Incidentally, a liver cleanse also eliminates most shoulder, upper arm and upper back pain.

We cannot advocate that this cleanse be used INSTEAD of a gallbladder operation (only you or your physician can make that decision after learning all about the benefits of this cleanse), however, since this procedure cannot deteriorate such a condition, there is an excellent chance that such an operation will indeed not be necessary after one or more of these liver cleanses. The main advantage is of course that a liver cleanse not only purges the gallbladder of it contents, but also does major house cleaning in the liver which an operation can never achieve.

One of the main functions of the liver is to make bile, 1 to 2 quarts in a day! The liver is full of tubes (biliary tubules) that deliver the bile to one large tube - the common bile duct. The gall bladder is attached to the common bile duct and acts as a storage reservoir. Eating fat or protein triggers the gall bladder to squeeze itself empty after about twenty minutes (or after ingesting the liver cleanse solution). The stored bile finishes its trip down the common bile duct to the small intestine and eventually to the colon (large intestine). Of course the gall bladder does not hold enough bile to neutralize all of the liver cleanse solution you have ingested. The empty gallbladder then signals its master, the liver, to dump all available bile forcefully into the common bile duct as well. In this fashion, the liver turns itself practically inside out and empties all of its available bile together with stones; gravel and crystals to condition (treat) the bile using the potent liver cleanse solution. Epsom salt serves to relax the tubules so that the passage of larger stones is painless and smooth. The Epsom salt also serves to evacuate the small and large intestines of faeces. 

For many persons, including children, the biliary ducts (tubing) are choked with gallstones. Some develop allergies or hives, but some have no symptoms at all. When the gall bladder is scanned or X-rayed, nothing is seen. Typically, the worst stones are not in the gallbladder but in the liver. Not only that, most are too small and not calcified, a pre-requisite for visibility on X-ray. There are over half a dozen varieties of gallstones, most of which have cholesterol crystals in them. They can be black, red, white, green or tan colored. The green ones get their color from being coated with bile. When dissected and observed under a microscope, many have imbedded unidentified objects. Are they fluke remains? Many are shaped like corks with longitudinal grooves below the tops. We can visualize the blocked bile ducts from such shapes. Other stones are composites - made from smaller ones - showing that they regrouped in the bile duct some time after the last cleanse.

At the very center of each stone scientists found a clump of bacteria, suggesting a dead bit of parasite might have started the formation of the stone. Perhaps it is the liver's function to encapsulate adult parasites to avoid getting destroyed by such an invader. That's fine for one or two, but how about thousands of such encapsulations?

Eventually the above-described defense mechanism turns into an immense blockage that keeps the liver from detoxifying and eliminating harmful substances such as solvents and parasites. You see, as the stones grow and become more numerous, the back-pressure on the liver causes it to make less bile, which is, of course the transportation medium for the undesirable substances. Imagine the situation of your garden hose having marbles in it. Much less water would flow, which in turn would decrease the ability of the hose to squirt out the marbles. With gallstones and liver stones, much less excess cholesterol leaves the body and cholesterol levels may rise. A liver cleanse will invariably result in a lowering of cholesterol levels.

Also, gall/liver stones, being porous, can pick up bacteria, cysts, viruses and parasite stages that are passing through the liver. In this way, "nests" of infection are formed, constantly supplying the body with fresh irritating bacteria. No stomach infection such as ulcers (check also into Manuka Honey as an antidote for ulcers) or intestinal bloating can be cured permanently without removing these stones from the gallbladder and liver. 


Cleansing the liver bile ducts is the most powerful procedure you can undertake in order to improve your body's health. A liver cleanse should be done twice a year if possible. Ideally, it should be part of a semi-annual kidney/liver/parasite cleanse the sequence of which is very important and enhances the overall results.

Phase I (optional):
Do any dental work first, if possible. Ideally, your mouth should be metal free and free of pathogenic bacteria. Ideally, all cavities should have been cleaned. A toxic mouth can put a heavy load on the liver, burdening it immediately after cleansing. Eliminate any tooth problem first for best results.

Phase II (optional):
Completing a Kidney Cleanse before cleansing the liver is also highly recommended but not mandatory. You want your kidneys, bladder and urinary tract in top condition so they can efficiently remove any substances incidentally absorbed from the intestines as the bile is being secreted. The procedure is to procure several different herbs from a herbal supply house and concoct a tea, which you sip, like a good wine, slowly, several times a day, for several weeks. The result is fine clean kidneys and no more urinary tract infection. It takes patience but it works! And it costs next to nothing!

Phase III (this phase is also optional):
Dr. Clark maintains that you can't clean a liver with living parasites in it and that you won't get many stones out, and you may feel quite sick. So, zap (see the end of this text for an address to procure a zapper or make your own with the instructions in Clark's books) daily the week before or get through the first three weeks of the parasite killing program before attempting a liver cleanse. If you are on the maintenance program, do a high dose program the week before.

The above OPTIONAL steps are always desirable, but are not mandatory because we have seen copious stone discharges, without the kidney or parasite cleanse prior to the liver cleanse.

Phase IV (mandatory):
Drink apple juice for three days preceding the liver cleanse. For these three days, eat frugally, if you must, and then only small amounts of raw unprocessed fruit and/or vegetable salads. Every day take at least one full quart of high quality, unfiltered, preferably homemade apple juice. You should be able to see the sediments on the bottom of the container. The pectin in the apple juice helps to soften and flatten the stones in the gall bladder and liver. This will also help their passage through the bile ducts. This semi-fast also empties the intestines of their food content and makes the collection of stones less problematic.

The Procedure (in 2 days time you will be free of gallstones)

Phase V - (Procedure):
• Choose a day like Saturday for the cleanse so that you can rest the next day. Take no medicines, vitamins or other pills that you can do without. They could hinder success of the cleanse.
• Stop any parasite or kidney cleanse the day before. 
• Eat a no-fat fruit breakfast and light fat-free lunch such as cooked cereals with fruit but no butter or milk. This allows the bile to build up and develop pressure in the liver. Higher pressure pushes out more stones.

• 2:00 PM
Do not eat or drink after 2:00 o'clock. If you break this rule you could feel quite uncomfortable later. Get your Epsom salts ready. At 2:00pm, mix 4 heaping tablespoons of Epsom salts in 3 cups of water and pour this into a jar. This makes four servings, 3/4 cup each. Please keep in mind that the first serving begins at 6:00pm and the 2nd serving for the evening is taken at 8:00pm. The other two required servings are reserved for the following morning.

Place the jar in the refrigerator to get ice cold (this is for convenience and taste only). Take an optional rectal enema before 4:00 PM with distilled (not chlorinated) warm water to clean out your large intestines of any unwanted fecal matter. The cleaner your intestines are, the easier it will be for the stones to be eliminated. Besides, if you want to see just what you will be eliminating, it is more appetizing to look only for stones and not be turned off by pungent stool.

• 6:00 PM
Drink one serving (3/4 cup) of the ice cold prepared Epsom salts water. If you did not prepare this potion ahead of time at 2:00 PM, mix 1 heaping tablespoon in 3/4 cup of water now. You may add 1/8 teaspoon of vitamin C powder to improve the taste.
If you have no vitamin C powder then add a little citrus juice to improve the taste; but this is entirely optional. You can certainly drink a few mouthfuls of water afterwards or rinse your mouth. Get the olive oil, lemons and grapefruit out to warm up a bit.

• 8:00 PM
Repeat the above by drinking another 3/4 cup of Epsom salts water. You have not eaten since two o'clock, but you won't feel hungry. Get your bedtime chores done now. Don't answer your telephone and be prepared to stay by yourself for the balance of the evening. The timing of the actual cleanse is relatively critical to achieve success. Do not be more than 10 minutes early or late for anything that follows next.

• 9:45 PM
Pour 3/4 cup (measured cup) of your high quality olive oil into the pint jar. Pour the prepared 3/4-cup of squeezed grapefruit and lemon juice into the measuring cup, adding this to the oil. Close the jar tightly with its lid and shake briskly until well mixed, almost watery. Only fresh squeezed juice will do this.

Now visit the bathroom one or more times, even if this makes you slightly late for your ten o'clock drink. Be ready to go to bed and STAY in bed. Don't clean up the kitchen. Do it the next day.

• 10:00 PM
Take the solution to your bedside if you want, but drink it standing up. Drink the potion you have mixed. If you have them, take four optional Ornithine capsules with the first sips to make sure you will sleep through the night. Take eight if you already suffer from insomnia. Get all of it down immediately, if possible. Very elderly, or weak persons, should space this over a period of five minutes.

Lie down immediately. The sooner you lie down, the more stones you will get out. Put your knees up to your chest in a foetal position. Lie on your right side for at least half an hour. The oil/citrus juice mixture will go to your gallbladder and liver. These organs will not know what to do with THAT much oil emulsion, so they will spasm and throw off all the available bile - plus stones, gravel and crystals.

One half-hour later - you may turn on your back with a good thick feather pillow. Try to think about what is happening in the liver. Think loving thoughts - your liver is sensitive and responsive to feelings of resentment, vindictiveness and hate. Try to keep perfectly still for about half an hour or at least 20 minutes. Visualize the cleansing action taking place. You may feel a train of stones traveling along the bile ducts like marbles. There is little likelihood of pain because the bile duct valves are open - thanks to the Epsom salts.

Relax and go to sleep. Let nature do her thing. Tomorrow you will be cleaner, much cleaner, and also healthier than before.

• Next morning (early)
Upon wakening, take your third dose of prepared Epsom salt solution. If you have indigestion or nausea (highly unlikely), wait until this is gone before drinking the Epsom salts. Don't take this potion before 6:00 AM. It would be best if you don't get up and have someone else give you this potion. This drink will act as a mild laxative and provoke several later loose bowel movements. Drink more water than usual to replenish lost liquids.

• 2 hours later
Take your fourth (the last one - Thank God!) dose of Epsom salts.
Drink 3/4 cup of the mixture. You may go back to bed if you like.

After 2 more hours you may get up and take something into your empty stomach. Start with some fresh-made fruit juice. Half an hour later, eat some fruit. One hour later you may eat regular food but keep it light, uncooked and natural. By supper of the next day (Sunday) you should feel fully recovered and ready to slay a dragon.

How well did you do?
Expect diarrhoea in the morning of the second day (Sunday). The ideal way to see what you are actually eliminating is to defecate into a white porcelain bowl or large white plastic bucket. The bowl or bucket is used instead of the toilet to also see the reddish crystals, which collect, at the bottom of the bowl (the stones float on top) and those crystals would ordinarily be lost somewhere at the bottomless hole in the toilet and you would have missed them. If you don't care to see the crystals - by all means, use the toilet.

Another way would be to use the toilet and look into it for the stones with a flashlight. Look for the greenish kind, since this is proof that they are genuine gallstones and not food residue. Only bile from the liver is green. The bowel movement (if there is any) sinks, but gall and liver stones float because of the cholesterol content. Eventually, you may have to eliminate up to 2,000 stones, in several sessions, over a period of a year or so, before the liver is clean enough to rid you of all allergies or upper back, or other symptoms, permanently. The first cleanse may rid you of them for a while, but as the stones from the rear of the liver travel forward, they might give you the same symptoms again. You may repeat this gallbladder/liver cleanse at two-month intervals until no more stones come out. 

Never purge when you are ill. Pregnant mothers should consult their pediatrician. The elderly should do this purge under the supervision of a health specialist. Drink lots of water during the second and third day.

Sometimes, the bile ducts are full of cholesterol crystals that did not form into round stones. They appear as a "chaff" floating on top of the toilet bowl water. It may be tan colored, harboring millions of tiny white crystals. Cleansing this chaff is just as important as purging stones. 

How safe is the liver cleanse?

It is very safe. Professionals and individuals have conducted thousands of liver purges, including many persons in their seventies and eighties. We have heard of nobody ending up in a hospital, and none reported pain. The author, in over a dozen years of private practice, has never seen any complications. This liver purge could make you feel a little uncomfortable for a day or two thereafter. Stirred-up toxins are in solution, begging to be released.

The above procedure contradicts many modern medical viewpoints. Gallstones are thought to be few, not thousands. They don't get linked to pains other than gall bladder attacks. It is easy to understand why this is thought: By the time you have acute pain attacks, some stones are in the gallbladder, are big enough and sufficiently calcified to be seen on X-ray, and they have caused inflammation there. 

When the gall bladder is removed surgically, the acute pain attack is gone, but bursitis, allergies, digestive problems and other symptoms recur and get worse. Stones are not thought to reside in the liver. If the liver is operated upon, only the largest and worst offenders can be removed - yet uncountable stones, gravel and crystals remain in the already clogged liver, which has not improved at all. 

The truth is self-evident: People who have their gallbladder surgically removed, still eliminate green, bile-coated stones with our liver purge. Anyone who cares to dissect these eliminated stones can see that the concentric circles and crystals of cholesterol match textbook pictures of "gallstones", exactly.

In the highly unlikely event that you feel waves of pain reaching up to your throat, you might have a gallstone stuck in a bile duct. Clay-colored stool is evidence of bile duct blockage. Epsom salts can relax that bile duct in 20 minutes. Take a heaping tablespoon in 3/4 cup of water but only on an empty stomach or you may feel quite ill. 

Taking a large dose of Valerian herb, 6 to 8 capsules four times a day, including bedtime, may also help to relax the duct. If you do get relief, you can be sure it was a spasm of the bile duct system. The magnesium in the Epsom salts relaxes spasms. It would be best to clean the liver a number of times (at two week intervals unless too ill) to try to dislodge the sticking gallstone. If this does not relieve the pain then you need to consult a medical professional.

It is advisable to drink copious amount of water during the second and third day, when you eliminate the waste matter and body fluids as well. This will prevent dehydration.
Usually it is recommended to kill parasites and cleanse the kidneys first. But if your throat pain is severe enough, you might just zap the parasites and go ahead with the liver cleanse at once.

To obtain permanent liver health, one should control the intake of high fat foods such as ice cream, potato chips, salad dressings, cheese, butter (excess), cream and exorbitant amounts of milk (more than 3 glasses a day). 

Feelings of resentment, vindictiveness, belligerence and hate are destructive to liver health. Avoid these at all cost!!! Forget the 'bad' others have done to you and forget the 'good' you have done to others. Learn to forgive! 





Epsom Salts

Minimum 4 heaped tablespoons

Olive Oil

¾ of a cup light olive oil is easier to get down, use only the best cold-pressed virgin oil

Fresh Lemons & Grapefruit

Do not use concentrate or store bought juice. Make you own, enough for a ¼ cup of lemon and ½ cup of grapefruit juice for the cleanse itself. If you cannot get grapefruit, then use only lemons, or vice versa

Ornithine (Optional)

4-8 to make sure you sleep

A suitable jar with a non-metallic lid

Shake your mixture well and gulp it down

½ cup of lemon/grapefruit juice

Use a couple of ounces of this juice each time to help get down the Epsom Salt solution (4 feedings) if desired
